We fermented this for three weeks because some things shouldn't be rushed. Like revenge. Or hot sauce that wants to see you cry.
Trinidad Scorpion. Ghost Pepper. Two peppers that don't play nice, sitting in a jar together for 21 days, getting angrier. Then we added blackberry, because every villain needs a charming sidekick.
The fermentation brings out flavors you didn't know peppers had — earthy, complex, slightly unhinged. The blackberry tries to balance things, bless its heart, but balance isn't really on the menu here.
One drop and your stir-fry becomes a conversation. Two drops and the conversation is mostly "oh wow." Three drops and you're signing a waiver.
Complexity? Yes. Heat? Absurdly. Regret? Eventually.
Not for the faint of heart. Barely for the brave.
